Held in the warm, sacred space of Hillside, each evening is a celebration of the culinary craft, with a talented local chef at the heart of the experience. The food and atmosphere are carefully designed as an immersive experience, treating both the meal and the moment as art—fostering warmth, creativity, and a deep sense of community.

Chef Horatio Alexander Smith: The Energy Chef of Eleuthera
In 2019, Chef Horatio Alexander Smith returned to his roots in Governor’s Harbour, Eleuthera, with his wife, Ashli, embracing the island’s serene lifestyle and vibrant energy. A trained chef and certified Wedding & Events Planner, Horatio specializes in Caribbean fusion cuisine, blending traditional flavors with soulful touches. His renowned Chef’s Experience at The House offers guests an authentic island experience filled with local art, warm conversation, and carefully curated dishes.
Horatio also owns Da Perk, a cozy cafe in Governor’s Harbour, and Briland Wave, an outdoor bistro on Harbour Island—both hubs for art, culture, and community. Visitors can explore Ashli’s brand, Artsea Bae, featuring handmade jewelry and reworked vintage clothing, adding a unique flair to each venue. Beyond curating these experiences, Horatio enjoys island life with Ashli and their daughter, Koffy Blue, making memories on the beach and enjoying the quintessential rhythm of Eleuthera.

Breaking Bread
Stone Crab Fresh, tender crab with delicate sweetness, served with dijon cilantro sauce.
Island Bruschetta w/ Balsamic Reduction Grilled artisan bread topped with vine-ripened tomatoes, fresh basil, and a drizzle of aged balsamic reduction, finished with crumbled feta.
Jerked Chicken Marinated in a blend of signature Caribbean spices, served on a crisp plantain chip with a touch of mango chutney.
Shared Plates
Freshly Curried Goat Slow-cooked in house-blended spices for deep, authentic flavor.
Coconut Basmati Rice Light and fragrant with a hint of tropical coconut.
Caribbean Roasted Corn Sweet corn charred and seasoned with sea salt and island herbs.
Herb Roasted Potatoes Crisp, earthy potatoes with fresh-picked herbs. Garden Salad Seasonal greens with roasted beets, toasted nuts, and feta.
Sweet Farewell
Coconut & Pineapple Island Tarts served w/ vanilla ice cream
Unlimited white and red wine served during dinner.
